how about some roasted eggplant 💥🍆

a yummy mouth explosion & an alternative recipe called Baba Ganoush.


Recipe:

ingredients:


1 eggplant

4-6 sprigs of rosemary

1 ts salt

a handful of pomegranate seeds


marinade

1 ts honey

1 tbsp olive oil

1 ts soy sauce

juice of half a lemon

a sprinkle of salt, pepper, & chili flakes


procedure:

  1. preheat oven to 180°C / 360°F

  2. cut eggplant in half

  3. with the tip of a knife, score the flesh deeply in a diamond cross-hatch pattern

  4. sprinkle salt over the flesh & set aside for 15-20 minutes

  5. in the meantime mix together all ingredients for the marinade in a small bowl

  6. take a baking sheet & form two nests with rosemary sprigs

  7. wipe salted eggplant down with a paper towel to get rid of all the exces water

  8. use a brush to put the marinade onto the eggplant & make sure you get into all the cracks & pores

  9. lay the eggplant hals cut side down onto the rosemary nests

  10. bake in the oven for 20-25 minutes

  11. plate with some fresh acidic salad & pomegranate seeds

  12. iss / mange / enjoy!

baba ganoush alternative:

-> when eggplant comes out of the oven, scrape out all the flesh & mash it together with pressed garlic, olive oil, lemon juice, & pomegranate seeds.
