Quinoa Falafel

I decided to give my friend's Guy Turland quinoa falafel recipe a go, & put a little personal twist on it by making a pickled sauce to top the falafel off.


Recipe


ingredients:


falafel

1 cup cooked cick peas

1/2 cup cooked quinoa

1/4 cup almond meal

1/4 cup parsley leaves

1 clove of garlic

1/2 chili

1/2 onion, finely chopped

juice of a half a lemon

1/2 ts cumin

1/2 ts coriander

1/2 ts salt

1/2 ts turmeric

1/2 ts baking powder

2 tbsp coconut oil


yogurt sauce

2 pickles, finely chopped

2 tbsp plain yogurt

a pinch of salt & chili powder


procedure:

  1. preheat oven to 200°C / 400°F

  2. combine all ingredients in a food processor & pulse until everything is well combined

  3. spoon out desired sized falafel balls & place them on a baking sheet with baking paper

  4. put into the fridge & let them cool for 15-30 minutes

  5. add olive oil to a large frying pan on high heat & fry until they're golden brown

  6. put them back onto the baking sheet & bake in the oven for another 10 minutes

  7. in a small bowl add yogurt, pickles, & season to taste

  8. serve with pickled yogurt sauce

  9. iss / mange / enjoy!
